Makassar, karebaindonesia.id – Indonesia tak diragukan lagi memiliki kekayaan alam dan budayanya. Setiap daerah memiliki ciri khas tersendirinya yang dikenal banyak orang hingga di mata dunia. Kebudayaan tradisionalnya menjadi sebuah perhatian yang sayang bila dilewatkan, salah satunya adalah kuliner tradisionalnya.
Sulawesi Selatan yang tak kalah kaya dengan warisan budaya leluhurnya memiliki sajian kuliner khas yang populer dan menjadi ikon tersendiri, yaitu Coto. Namun, melalui tangan pemuda yang bernama Surahmanuddin, dia merintis sebuah usaha kuliner dengan Coto sebagai menu andalannya, yaitu Raja Bugis.
Surahmanuddin mulai merintis usahanya pada Juni 2020 lalu. Dia pun mulai membuka usahanya dengan menjual menu khas Sulawesi Selatan, seperti Coto dan Palekko. Dalam tuturannya, Coto sebagai menu andalannya di Raja Bugis berbeda daripada yang lain.
“Dalam hidangan Coto di Raja Bugis, kami memakai bahan rempah yang memiliki nilai khasiat yang luar biasa, yaitu Habbatussauda. Habbatussauda menjadi rempah yang diakui oleh Rasulullah sang raja umat dalam hadisnya.
“Rempah Habbatusauda adalah raja obat yang dapat mengobati segala penyakit seperti dari hadits Rasulullah Shalallahu ‘Alaihi Wa Sallam “Sesungguhnya di dalam Habbatussauda (jintan hitam) terdapat penyembuh bagi segala macam penyakit, kecuali kematian” (H.R. Bukhori & Muslim).
“Jadi bahan rempah dalam Coto di Raja Bugis betul-betul adalah hidangan para raja,” ujarnya saat ditemui di Titik Kumpul Pettarani pada Minggu, 20 September 2020 kemarin malam.
Tambah Surahmanuddin, hidangan Coto dan Palekko di Raja Bugis memakai daging lokal dengan tujuan mempertahankan cita rasanya yang asli turun-temurun diteruskan dari generasi ke generasi masyarakat Sulawesi Selatan.
Walau hidangan Coto dan Palekko telah memiliki banyak pasar di Sulawesi Selatan, Surahmanuddin tetap yakin bahwa bisnis usaha yang dirintisnya akan berjalan lancar dan menjadi sukses ke depannya.
“Pada saat pandemi sekarang ini, kami tetap yakin bahwa Raja Bugis akan sukses dan menjadi inspirasi bagi UMKM dan para pemuda untuk memulai bisnis usahanya, Insyaallah,” mantapnya.
Selain menjual hidangan Coto dan Palekko, Raja Bugis berencana akan menjual bumbu instan yang bisa menjadi oleh-oleh khas Sulawesi Selatan, seperti bumbu Coto, Palekko, dan Sop Konro.[]
